The traditional production of Nuremberg Rostbratwursts PGI continues both as an artisanal craft and on an industrial scale. Around 70 butcher shops in Nuremberg, represented by the Nuremberg Butchers’ Guild, prepare this fine delicacy for sale at their meat counters.
The longer shelf life offered by vacuum packaging allows industrial producers like Schlütter’s Echte, Kupfer, HoWe, and WOLF Essgenuss to make original Nuremberg Bratwursts PGI available in refrigerated cases in Germany and around the world. This PGI protection therefore helps safeguard the authentic flavor of Nuremberg Rostbratwursts.
HoWe Wurstwaren KG
With a total daily production volume of up to 4 million sausages, HoWe Wurstwaren KG is one of the leading producers of the Nuremberg Bratwurst PGI (Protected Geographical Indication).
Gebrüder Kupfer GmbH & Co. KG
The family-owned Hans Kupfer & Sohn butcher’s shop was founded in Heilsbronn in 1906. In 1991, this was followed by Gebrüder Kupfer GmbH, which now produces around one million original Nuremberg Bratwursts a day.
WOLF Essgenuss GmbH
Christian Wolf has led the WOLF Group since 1999 and represents the fourth generation of family leadership. Around 150 employees produce about 200 million sausages every year.

Schlütter’s Echte! Original Nuremberg Rostbratwursts have been part of the Ponnath family business in Kemnath since 1984. As one of the oldest master butchers in the world, Ponnath can look back on a company history spanning over 300 years.
