World Culinary
Taste has a home

The Bavarian State Ministry of Food, Agriculture and Forestry uses the “WeltGenussErbe Bayern” (“World Culinary Heritage Bavaria”) brand to market Bavarian foods and agricultural products, wines, and spirits that have been granted the EU status of Protected Designation of Origin (PDO) or Protected Geographical Indication (PGI).

The scent of Nuremberg Bratwursts floats through downtown Nuremberg – one hearty bite, one unmistakable flavor!
That’s what we want to preserve.

When shopping for food, specialties that currently have EU regional protection
can be identified either by the yellow-blue or yellow-red symbol, or by checking for the presence of “PGI” or “PDO” next to the product name.

A GOOD FEELING, INSIDE AND OUT

More than 50 Bavarian delicacies are currently protected against counterfeiting by EU legislation. Each and every one of these original regional specialties is backed by quality and origin standards that are monitored by a state-certified control system.

On account of their specific characteristics – which may include their history, guilds, or local soil quality – these specialty products may only be manufactured in the respective region and are therefore “rooted” to that region or locality. This approach safeguards this culinary heritage for future generations to enjoy.

PRESERVING THE FLAVOR FOR THE FUTURE

Some regional specialties are based on traditional recipes with a centuries-old tradition and have been enjoyed by many generations before us. Bayerisches Bier PGI recently celebrated 500 years of adherence to beer purity laws, while Allgäuer Emmentaler PDO cheese has been produced in Southern Bavaria for over 200 years.

Thanks to this certification, consumers can be sure that the Nürnberger Rostbratwurst PGI has been made only from prime, fat-free cuts of lean pork, together with marjoram, salt, and pepper, for over 700 years – ever since its first mention in 1313. No other sausage achieves the same high standards of quality as the dainty delicacy from Nuremberg: lower-quality meat or the addition of water for a smoother sausage filler are strictly prohibited.

DThe EU applies the same strict standards to the cheese Allgäuer Bergkäse PDO, which must be made exclusively from fresh raw milk from the Allgäu region and mature for at least four months. Similarly, the protected beef product Bayerisches Rindfleisch PGI always comes from animals who were born and raised in Bavaria, and who were transported for no more than three hours before slaughter. This beef has a significantly lower pH, and is demonstrably more tender and therefore superior in terms of both quality and flavor.

PROTECTED DESIGNATION OF ORIGIN BROCHURE „WELTGENUSSERBE BAYERN“
(2019 EDITION)

Bavarian specialties are as diverse as the regions in the free state. And each of the products presented in the brochure is enshrined in the region in its own particular way. This regional
character makes the presented products so exceptional and worth protecting. The brochure spotlights the specific regional character traits. In addition, you can find entertaining anecdotes and carefully selected recipes. The brochure was supplemented to include the “Wines” and “Spirits” sections due to the increasing integration of designations of origin in EU law.

If you would like even more detailed information on the specialties whose origins are protected by the EU or information on the over 270 typical regional foods from Bavaria, we also recommend that you visit the website  www.spezialitaetenland-bayern.de!
