Nuremberg Rostbratwursts
Our quality product!
Even today, the City Council keeps a close eye on the quality of “its” bratwursts. The Law, Economy, and Labor Committee of the Nuremberg City Council last ruled on the matter on March 18, 1998, when it issued a decision stating that Nuremberg Bratwursts and Rostbratwursts must be made according to a specific recipe and process, to properly meet the criteria of guild practice and consumer expectations.
The Imperial City of Nuremberg already had access to aromatic herbs and spices in medieval times. This allowed the creation of specialties like Nuremberg Gingerbread and Nuremberg Bratwursts as artisanal delicacies.
OUR QUALITY PROMISE
-
1
Nuremberg Quality Seal
The genuine, gourmet quality of “Original Nuremberg Rostbratwursts” is marked by the red Nuremberg Quality Seal.
Only the best ingredients are used for this premium product that, even today, may only bear the name Nuremberg Rostbratwurst if it has been produced according to our long-standing recipe within the city limits.

2
High-quality meat
The Nuremberg Bratwurst is made exclusively from fresh pork meat. Prime cuts are used (meat blends are prohibited): traditionally these will be pork shoulder, pork ham, pork jowl, and pork belly.
-
3
Aromatic herbs and spices
Salt, pepper, and marjoram make up the basic seasoning for Nuremberg Bratwursts. A master butcher may also introduce subtle flavor notes – a pinch of allspice, a little mace, a touch of lemon – as they see fit.

4
Freshly made each day
Nuremberg’s butchers make their bratwursts fresh each and every day. Since the 1970s, the consistently strong demand for bratwursts outside Nuremberg’s city walls have also been met by vacuum packaging the sausages. A short blanching process and airtight packaging now keep these Nuremberg delicacies fresh for longer, so they can be enjoyed the world over.
-
5
Strict quality controls
The entire production process – whether artisanal or industrial-scale – is subject to regular quality controls. External appraisers check for compliance with the specific ingredients and production conditions. Within each company, those responsible receive regular training to ensure that the entire production process – from checking the meat supplied to packaging the final product – meets the criteria for a specialty sausage.

Gluten- and lactose-free
Nuremberg Rostbratwursts are gluten- and lactose-free, and therefore ideal for inclusion in a diet for people with these food intolerances.

QS quality scheme
DLG food testing
food testing provides consumers with neutral and independent opinions about
the quality of food products. Following the principle of active consumer protection, these product tests are carried out by scientific experts to reflect the latest quality standards and accepted analytical methods. These tests assess the sensory qualities of
food products (color, appearance, consistency, odor, and flavor). Other important
criteria include food preparation tests and packaging and labeling checks, as well as
chemical, microbiological, and physical testing conducted by accredited
laboratories. http://www.dlg.org/
QS quality scheme
The QS quality scheme for food products is the only such scheme in Europe
that provides quality assurance from farm to shop. Since its introduction in 2001, the scheme has stood for comprehensive controls, reliable confirmation of origin, and the clear labeling of food products from high-quality producers. https://www.q-s.de/
